La Cuvée

 

Fleur de Roche is a dry white wine from the Bergerac appellation. The vines are located on the stone of Pomport plateau. The vines draw their strength and robustness from the rock which gives the wine its minerality, hence the name of the cuvée "Fleur de Roche" or "A fleur de Roche".

Surface exploited: 2,5 ha

Soil type: Clayey on karstic limestone.

Exposition: south facing

 

At the winery

Harvest: Mechanical harvest in September

Vinification:

  • Direct pressing.

  • Alcoholic fermentation in thermo-regulated stainless steel tanks.

  • Not filtered, not fined.

Ageing:

Aged on fine lees in stainless steel tanks for 5 months.

Slight stirring of the lees.

Characteristics:

  • 13.5 ° of alcohol.

  • 0.4 g/l of residual sugar.

  • 0.35 volatile acidity.

  • 35mg/l of total SO2 and 9 mg/l of free SO2.

In the glass

 

Tasting notes:

On the nose, the Sauvignon aromas are present.

In the mouth, you will find a beautiful texture and aromas of yellow fruits : pineapple, pear...

Wine & food pairing:

  • As an aperitif Shellfish

  • All types of fish

  • White meats Goat's and sheep's cheese

Tasting advice:

To be served between 7 and 9 °C.

Uncork 15 minutes before tasting.

Ready to drink now. Aging potential : 5 years
